So I have to admit, I'm up about 6lbs above LDW right now. Too many temptaions, too many correction days and not enough planning or clean eating to get things stable and keep it there. It happened over 4-5 days and jumped up to +8lbs LDW! I did a yogurt day yesterday and dropped 2lbs so I'll try to keep clean a day and then do another high protein day on Thursday. I hope this holiday doesn't do any more damage to my plan! LOL I wanted to start on Christmas but the majority of friends that are starting another round here soon plan to start on New Years. I'm not sure I could stay strong while everyone around me is still enjoying the freedom of M! So, In my own best interest, I will wait and start with them. Teamwork really helps bring success to a round! I'm excited about how many of us are starting the New Year together and think this will be my best round yet! It will be fun :))

Cauliflower Pizza

1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)


pizza sauce, shredded cheese and your choice of toppings

To "Rice" the Cauliflower:
Take fresh cauliflower, remove stems and leaves, and chop florets into chunks. Add to food processor and pulse until it looks like grain. Do not puree it. (you can also grate it with a cheese grater). Microwave cauliflower for 8 minutes. No need to add water, the moisture in the cauliflower is enough to cook it.


To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet and spread out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning. Bake at 450 degrees for ~15 minutes.

Remove from oven. Let cool a bit. Add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

Note that toppings need to be precooked since you are only broiling for a few minutes.




 
For the pizza lovers! I have 2 new ways to make a dish that is not exactly pizza but very reminiscent and absolutely delicious! I'll do them over 2 posts so people can find them in the category list :) 

Zucchini Pizza Crust
 
Large raw zucchini, shredded (between 1.5-2 cups)
2 eggs
2 cups shredded mozzarella cheese (or pizza cheese*)
Preheat oven to 450 degrees.
oiled cookie sheet.
Shred a large zucchini. Squeeze to remove excess water. Add egg and cheese, and mix well.
Spread the dough onto the pan evenly (no thick spots) and bake for 12-15 minutes, or until the crust is mostly cooked.
Remove from oven. Let cool a bit. Add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).
 
Hi! Yes, I'm still kicking around. It is the busy season right now and I feel like I'm running before my feet hit the ground every morning. The only thing that has slowed down is business....but only because I am out of stock again! Thank you media but no thank you! There was a silly scare put out last week due to some sites breaking some basic rules. The media, as well as many companies, jumped at the opportunity to use fear to their advantage. The media tried to scare everyone away from using hCG while the retailers used this to up their prices and clear out stock. Good grief! I am not changing a thing. So long as my price stays the same so will my retail price. I have not been told that my price is going up. If you read my blog than you know I don't play games. I'm trying to help people who are dealing with the same problems I am when it comes to our health. 
So not only is my price stable but so am I (at least as far as my weight goes ;) LOL). I am a bit up but I have also been exercising and can feel new muscle mass, especially in my legs and arms. I want to focus on getting a good routine in but I will still have to tone it back during my up coming round. I won't have enough time before next round to make my body really used to it. So far I have been cycling for 20-30 mins in the morning at least 3 times a week....but I just started so will see how this week goes (ie. I've only done 3 workouts in the last week). With winter here, I'm getting lots of shoveling and outside time with the kids. Feeling great but still some neck issues. The last 3 days, I've had to take tylenol to deal with the neck pain but at least it works now. 15 minutes after I'm good to go. I have 3 more weeks before I start round 4 (sounds like boxing...I hear the bell ring in my mind). I'm excited!!!!
