Egg White Dessert
Items needed: Cookie sheet lined with parchment paper, hand mixer or stand mixer, metal or glass bowl, metal spoon or pastry bag, Whisk attachment ideal
Set oven at 300F
Ingredients:
3  Egg whites (NO yolk!)
1/4 tsp White vinegar
1-2 pkts Stevia, plus more to sprinkle to taste
1 squirt Stevia Vanilla Creme drops
10 Strawberries, hulled and sliced
**Optional** Some people like to add a pinch of cream of tartar
Try with different stevia flavours or extracts but watch for added sugars in extracts.

Separate 3 cold eggs, save whites at room temperature for 30 minutes
Beat eg whites and vinegar on medium high speed until they start to stiffen (Can take 10+ minutes, depending...)
Slowly sprinkle Stevia over egg whites while whipping. Continue whisking until very stiff. Fold in squirt of vanilla creme stevia drops. Spoon or pipe into 4 cup-shapes onto parchment paper. Place in oven, reduce heat to 250F
Bake 1-1/2 hours. Turn off oven, let meringue shells sit for 30 minutes in closed oven. Top shells with sliced strawberries sprinkle with Stevia, if desired.
ENJOY!!
VARIATION< Sprinkle with cocoa powder prior to baking, and top with 'chocolate syrup' made with 1Tsp milk,
1 T cocoa powder, Stevia to taste
water to thin if needed

Counts as ONE PROTEIN<( but you have to eat a whole egg also!) And one fruit.

I'm into elimination now. One more day after today and I'm officially on maintenance (M) again. Yay! So my total release for this round was 16lbs and I did a total of 21 days on the very low calorie diet (vlcd). That's a total of 19.2lbs including my load weight! Pretty happy with that! I'm looking forward to eating my big breakfasts and cooking with extra virgin olive oil (evoo) again. Bring on the eggs! Woohooo!! So a reminder for some and new info for others. I use this link to calculate my BMR+Activity Level which tells me how many calories I have to eat everyday in order to maintain my current weight (169lbs). Make sure you click on the Daily Calorie Needs to multiply in your activity level! So my current calories will have to add up to 1848 calories per day. I don't think I'll have any problems now that it is under 2000 calories per day. I remember how hard it was to eat over 2000 a day on my first M!
This is pretty straight forward once you get the hang of it. On the first day of M, I'll eat at least 1500 calories by cooking with evoo and incorporating a big breakfast and snacks. Try not to eat more than 2 fruits a day in the first week. Focus on big salads, stews (no starches though. see my sample page), high protein, and keep the water intake up! 
A common question I get has to do with understanding how much protein to eat during M. It is best to eat 1 gram of protein for every pound you weigh and no less than 100g per day. Now people say: but we are eating 200g a day in vlcd!?! The content of protein in your meat is not equal to the weight. Look at labels or join a good calories counter site. A large egg has 7 grams of protein. My current whey shake has 26 grams per scoop. 100g of chicken breast has 30 grams. Starting to make some sense? :)
Next...which whey shake do you use? I like a number of different brands and price plays a big role in which one I am currently using. Here is a list of my favorites: North Coast Naturals (found in the organic section at Superstore), Kaizen All Natural (not the costco one! that one has sucralose in it. Look for the All Natural one at Save On), GNC Pro Performance Whey Iso Burst All Natural (GNC store), and PVL Iso Gold All Natural (Reflex store). All of these are sweetened with stevia, no artificial sweeteners, and have 2g of carbs or less. The key is to read the labels and ask for help in the store. Look for All Natural on the label and then check the ingredients list. It isn't good enough to just check the nutritional label as it may not reveal any sugar there but does in the ingredients. This is true for most products out there so when choosing things like dressing for your salad, look at the ingredients list first. I like to use a whey protein isolate.I bought a cheap $10 hand mixer from Superstore and it works great for blending my almond milk, virgin coconut oil, and whey shakes. For added texture and flavour, try adding some berries!
I need to be meeting my Daily Calorie Needs by day 3 or 4 of M. I don't want my body to go into starvation mode. Once I'm into week 2 there is lots of flexibility in what I can eat and it will be time to start exercising. I'm adding exercise pretty quick this M as I want to get going on some muscles here! Pretty excited too! I'll try to blog more about my progress as I've been absent more than usual these last couple months. Let's get to work on shaping how my life will look after hCG! Not sure how long of a break I'll be taking but I don't think I'll revisit vlcd for at least 2 months.

I couldn't help myself! I just had to weigh this morning!!! I'm so happy to report that I have lost 3.8lbs over the last 3 days :)) Now that's what I'm talking about! 3 more days of drops and then 3 more elimination....I can do this! 6 days to a nice big breakfast of eggs with mixed veggies. Yay!!!

R4P2D15 +0.4 from yesterday....okay. I know I said I was going to stop but I've changed my mind. Yesterday I was sipping away on my who know what number of tea and I looked at the pack of stevia I was using. I bought some powder based stevia from my favorite brand NOW thinking it would be easier than carrying the liquid version around. Well! If the new stuff didn't go and have rice maltodextrin in it!!! Boy, am I pissed at that company right now. I also just so happened to start using it about the same time I started my antibiotics....so, even though I am up again today, I'm sticking it out to the minimum 21 days. I'm not going to weigh in until I hit day 21 because I don't think I can handle seeing another plus or even a stall at this point. I'll look on day 21 and decide based on that number, and how I'm feeling, where to go from that point. Read your labels peeps!

I'm just wasting my time and effort here so I'm stopping the drops until I'm done these pills. I wish I hadn't had it so stuck in my head that this could happen. Sort of feels like I created the problem.... *sigh* Well, time to go tell the group. Hopefully everyone is doing better than me!

R4P2D10 (-9.4) up 0.8 from yesterday.....*sigh* I hope this is just a natural fluctuation.
I'm concerned that the antibiotics I started 2 days ago are interfering with my losses. I'll just have to wait and see. I have been POP (perfectly on protocol) this whole round. If I'm up again tomorrow or keep stalling for more than the 4-5 days seen normally than I may have to stop until I'm done these pills. That would so suck! I've been kicking it this round! I read up on the pills (tetracycline) and it says to avoid dairy, take on an empty stomach and it just so happens to make you lose your appetite.....I thought...perfect! I can do all that because I'm on protocol! But if it is going to cause me to gain!?!?! They also tend to cause nausea (totally feeling that one). I have to say, it is rather scary all the side effects this antibiotic can cause! Look at this list (and these are the more common side effects not the rare list): Nausea, vomiting, diarrhea, loss of appetite, mouth sore, black hairy tongue (YES! IT ACTUALLY SAYS BLACK HAIRY TONGUE!!!!), sore throat, dizziness, headache, or rectal discomfort (gee....how *nice*). The more "unlikely but serious side effects" include sunburn due to sun sensitivity, nail discoloration, muscle pain, difficult or painful swallowing, change in amount of urine, brown/gray tooth discoloration, numbness/tingling of the hands and feet, unusual fatigue, and new signs of infection.....Holy crap!!! BUT WAIT! THERE'S MORE. "Rare but VERY serious (we weren't serious before????) side effects: hearing changes, persistent or severe headache, vision changes, easy bruising/bleeding, severe stomach/abdominal pain, yellowing eyes/skin, dark urine. This drug is known to cause a severe intestinal condition called Clostridium difficile-associated diarrhea.....but it is in the rarely category (does this make it more likely than the 'rare but VERY serious' category???) It goes on to say that this could happen while I'm taking the pills or anytime from "weeks to months" following treatment! It lists even more on allergic reactions after all that (blood in stool, hives, oral thrush and yeast infections....just to name a few). Once it is done scaring the shit out of me it says: "This is NOT a complete list of possible side effects." Good Grief!!! I'd like to show this list to people who ask what the side effects of hCG are.....(the only side effects are those associated with rapid weight loss NOT the hCG. HCG is the same thing in our system when we are pregnant not a chemical like tetracycline which most people gladly consume to be rid of an infection).
So, now I play russian rolette with my body one pill at a time and wonder what will happen not only with my diet but my health in general. Here's the kicker.....I have to take them for 4-6 weeks. All because I got a patch of dry skin on my chin starting in Dec. (when I was not on hCG for those wondering). So far....no black hairy tongue ;-P

Typical swing into second week slow down. Today I'm making my family cheese cake because I have some cream cheese close to expiring. Ugh. It will be hard not to sample it! I can do it. I can do it. I can do it. I want to make it another 10lbs before returning to M. I also don't want to stay on longer than the minimum here. NO CHEATING! That means 12 more days of drops after today and of course the 3 days elimination. A little over 2 weeks....I can do it. I can do it. I can do it. The problem with being this much closer to goal....totally hard to not just say...I'm good here, lol.
As for today's adventure:

Cheese Cake
Filling: 3 packages (1 and 1/2 lbs) cream cheese (room temperature)
4 eggs (preferably room temperature)
1 and 1/2 teaspoon (1/2 Tablespoon) vanilla
1 and 1/2 teaspoon  (1/2 Tablespoon) lemon juice
1 and 1/3 cups sugar equivalent of Stevia
1/4 cup sour cream

Crust: 1 cup almond meal
2 Tablespoon melted butter
2 Tablespoon sugar equivalent in Stevia

Preparation:
Heat oven to 375 F.

Tip: If you have bricks or a pizza stone or unglazed ceramic tile*, put them on the
lower rack of the oven. This will hold the heat in the oven. This is good for
cheesecakes not baked in a water bath. (Well, actually, it's helpful for any
kind of baking, as it keeps the heat in the oven more constant. I keep a pizza
stone in the oven most of the time.)

Combine  ingredients for crust, and press into the bottom of a springform pan. Bake for 8
to 10 minutes, until fragrant and beginning to brown.

Raise oven heat to 400 F, or lower to 350 F if you're using a water bath. Pour in filling to completely cooled crust and bake until top browns (~30mins)

Happy dancing :)) Actually, that's exactly what I did last night. Dancing into the wee hours of the night.
Today I went snowmobiling so I increased my protein for both meals to 4 ounces to help counter the extra activity in the last 24 hours. We'll see how tomorrow goes. I can really feel the strain in my stomach muscles from pulling the machine on turns today. While the weather was warm it brought with it some rain. This made it hard to turn and I almost flipped on one turn...got stuck up on my side! LOL We ropped some GTs behind the snowmobiles and I dragged my hubby around a field. It was so much fun! I laughed so many times as he tried to stand on the little kid GT snow racers only to go head over heals through the snow. You could see the prints in the snow telling the tale of our adventures. Maybe that's why my tummy hurts... :) Some pain is good pain!

Fighting off some cravings today but only because I keep reading about cheese. UGH! I love cheese! Otherwise, I'm doing great, LOL. Seems the weight is slipping off pretty good. I can no longer find my sheets to compare previous rounds and can't be bothered to look back on my blog just now. I'll wait until I've hit a 21 days and then compare. No need to get my brain all working on something I really can't control. So long as I'm focused on getting my 11-12 cups of water in each day and no more than my allowed foods then I've done all I can. 

My dosing is working like this: 7:30am hCG, 7:45am B12, 8am brush teeth, water water water, 10am hCG, water water,  12pm Lunch,water, 1pm hCG, water water, 4pm hCG, water, 5pm Supper, water water, 7pm hCG, water, 9:30pm hCG. If I do a snack than it is usually between 7:30pm and 8:30pm.

Nothing too exciting to report so I'll leave it at that for today.

R4P2D3 (-3.2) down 2.6 from yesterday. I'm getting confused because we are doing a tally on the support group but we are calculating from our 1st day of vlcd. So on there I'm -6.6 total, lol. I'll try to keep it all straight on here! So when you look at my total (currently -3.2) you are seeing my loss for this round based on my PREloading weight just as I've done for previous rounds on my blog :)

Not a bad start, hey! I'm happy :) I did chicken cooked in Frank's hot sauce and garlic on a bed of Romaine lettuce for lunch. Squirted some mustard on top and delish! Not sure what I'm doing for supper as I need to go get some veggies. I'm thinking cabbage and prawn soup perhaps.....meh....I'll see what looks good in the store :)
