I know not everyone is as ambitious as I am with making almond milk and my own almond flour based recipes. It is also not the most cost effective lifestyle to buy many of the healthier flours out there (ie coconut, flax, and/or almond meal/flour). So today I am sharing with you a product that I found in bulk at Costco. Anita's Organic Mill: Pancake & Waffle Mix is absolutely awesome! It's ingredients are all organic and consist of Spelt and Kamut Khorasan Wheat, non alum baking powder, and sea salt. Simple and healthy with no added sugars. This is a great M2 - Life Phase choice! Even my kids were into eating these pancakes! I did use almost twice the milk the recipes calls for and I also doubled the eggs but I have always done this even with traditional (ha! traditional being the modern wrong way!) pancakes. This makes for a thinner (almost crepe like) pancake. The final thing I like about this product is that it is a Canadian product! In fact, it is made here is BC! Yay!
Organic, local, tasty, and healthy! I'm a happy gal :)

Faux Escargot Packed Mushroom Caps
6-12 mushrooms
1 radish bunch
Mozza and Cheddar cheese
Pesto Herb Mix (by Epicure)
green onion
EVOO

Slice Radishes and toss with 1 Tbsp evoo (extra virgin olive oil) and 1/2-1 Tbsp Pesto Herb mix. Spread out on cookie sheet and bake at 350' until radishes appear semitransparent. Remove and loosely chop radishes. Clean Mushrooms and remove stems. Place on baking sheet to be filled. Chop mushroom stems, green onions, and shred cheese. Toss it all with the radishes and stuff caps. Return to oven and bake (350') until cheese is bubbling.
I sort of stumbled on this one but it was so good I ended up eating more than my share!

Dinner party at my parents tonight for my Mom's retirement! They did a little cake and tea thing at her work the other day and yes I ate cake...mmmmm... :) I wasn't feeling good that day so not much stayed in me for long. I was still relieved that I hadn't gained (I actually lost) on the scale the next morning. I think a bit caught up to me today though. Sitting at 166.6 (think that's a bad thing?lol) which is still 2.4 below LDW. I'm just a bit concerned that the lasagna (definitely not made with whole wheat pasta) tonight will by my doom. Good thing I have lots of wiggle room! I LOVE lasagna!!! Hehehe!
On a not so pleasant note, tom is here to wreak havoc too. I'm feeling pretty moody and trying not to be.
To frustrate me further, the teachers have voted to strike. :(( No school Monday, Tuesday and likely Wednesday... *sigh* Perhaps I should have home schooled... 
I'm going to push all those thoughts out of my head for now though and focus on tonight's party! Congrats Momma!!! Retirement...WOW! Lucky Lucky!
