Almost time for my trip with the kids! I'm getting excited :)) Current weight is +0.8LDW. I had to do a correction day on Tuesday after 2 nights (one including coffee cake and icecream...mmmm) of eating way too much carbs. I hadn't really planned it to be a correction day as I was just at 2lbs above. The day was just soo busy for me that before I knew it I was half way through the day and hadn't eaten yet! I lost 1.2lbs and there I've sat for the last couple days. I'm happy with that!
Our chicks have already grown into chickens! It's crazy how fast they grew. They won't be laying eggs until fall but they sure look like adults. Hubby can't come on this trip so he'll be taking care of them while we're gone. We do have a wonderful lady that has offered to watch them any time we are away though. How lucky are we?!? Very!
I'm going to 2 major events this weekend. 1) a wedding for a good friend 2) Halloween in July Bash.....they are both happening on the same day!!! LOL So wedding in the day and into the first part of the night and then rush home, change, and off to the bash until the wee hours of the night. I'll see if I can figure out how to post some pics on here...if your part of my Facebook group you'll see them there!

Well folks, I don't know how I'm going to swing this but I have a trip planned to Vancouver with the kids and no hubby. I must be insane. We just can't afford for him to take more time off this year and I felt it was important to get down south for my aunt's 50th Birthday. It is also my grandpa's 80th in the start of September but that is just as school is starting so I'm honoring both on this trip :) The kids really wanted to go back to the Vancouver Aquarium this summer so I'm going to take this one day at a time...that's the best I can do! 
We'll spend the weekend with family but the week after is going to be our time to 'see the sites' sort of speak. I'm thinking Stanley Park one day, Capilano suspension bridge another day, take in a movie at the imax and probably science world too. I'm hoping to take the kids on some less expensive but memorable experiences too....hit the beach, ride the skytrain, walk through China Town (okay...that one will probably end up expensive too). Now, if I can get even half this list done on our trip I'll be happy!
No worries as far as my weight goes right now. I was up today but it just brought me to my LDW. I even know why...I ordered a salad for supper and failed to read 'gingered pecans'. I picked them out (they were loaded with brown sugar) but I could tell there was still some that got mixed into the dressing. Carb headache in the evening (I get one every time I eat sugar) and up this morning. Oh well. Other than that the blueberries and strawberries with feta, spinach and grilled chicken was really tasty. I will remake it at home for sure (this time with just pecans, lol).
I plan to take the basics with me on our vacation: whey powder, chia seeds, Mary's organic crackers, mixed nuts, and almond milk. That's all that comes to mind at the moment...Oh! and Zevia pops! I'll have my scale with me to help keep me honest. Eating out isn't that big a deal either but for the most part it is best to go to a sit down restaurant. Not many drive throughs will have a salad worth buying. I once had a Timmies make my sandwich into a salad instead...it was like 2 pieces of lettuce and 1 slice of tomato... I'll just have to keep my eye out for Pita Pit or like places! Grocery stores are pretty good for prepared salads with the dressing on the side too. Little extra walking to get it but still pretty quick and more worth the $$. I'll also have a fridge once we are into the hotel so I can stock up on lots of fruit and veggies. They offer free breakfast with your stay so it should be easy to get my daily egg fix. Of course, I don't expect that I will be eating ALL the 'right' foods....gotta have a couple treats while I'm there!!!

Good day!!! Happy to report that all is well :) I have been sitting between 157-158 for I don't know how long now....really I can't even remember the last time I had to do a correction day. Super happy!!!
I'm seeing a reoccurring question on the support group lately. Which foods to add when we hit M2 (this is the 4th week of maintenance where we start to add carbs back into our diet). Here is a list of staples in my house:
WildRoots Sprouted Brown Rice
Anita's Organic Mill Pancake & Waffle Mix ancient grains
Mary's Organic Crackers
Bananas
Grapes
Sprouted Grain Breads (I like Squirrely Bread)
Steel Cut Oats
Honey and Real Maple Syrup (check the ingredients!)
Lentils (Don't pass these on your list! The benifits of lentils in your diet warrant the mild effort put into learning how to store and prepare this super fiber food!)
Whole Wheat Pastas
I buy most of these from Costco! You can afford to eat healthy :)
Once in lifephase I still keep my carb portions from these foods to twice a day. Just what works for me!

Wow!! Almost a month since my last update! Sorry everyone...June marked the end of the school year with so many events that I could hardly keep up with the day to day.
I'm right on my LDW today (158lbs) so doing good :) I have been bouncing around the 159-161lbs mark when I was excersizing but messed up my shoulder last week and had to stop. Booo! It has been my number one downfall in the past. I try to get fit and end up in physio. I'm pretty sure that I dropped back down to my LDW due to losing the muscle I had just built! I'm still in a lot of pain so not sure when I'll be getting back at it...I'll keep you posted.
I had a request for a P2 safe recipe for Jerky. This isn't a measured recipe as I find I sort of wing it and change it up based on what I feel like...you could try seasoning your steak for dinner a few times before making it a bit stronger and putting the strips in a dehydrator or oven.
Slice some bottom round or round steak about 1/8-1/4 inch thick then marinate it in a brine made up of various spices. Braggs liquid soy seasoning, black pepper, garlic, onion, cayenne and liquid smoke (use your imagination on other spices I have made chili jerky before). Add meat slices to the mix, cover and refrigerate over night. Remove and pat dry with a towel then turn oven to 145 or as close as possible. Lay the slices directly on the rack and prop open the oven door just a little bit. Or use a food dehydrator. This can take anywhere from 2-6 hours depending on how thick you sliced it and which method you use. Make sure it is dry all the way through. If it is too dry you can put it in a paper bag and put it in the fridge for a day or two. Put it in a zip lock and store in the fridge. Try small batches first until you get the ratio of spices down.
A fellow hCGer posted this idea on a support page some time back (I think his first name was James...thanks James!). I've only made minor modifications as he had already perfected the general method :)
