Think I'll be keeping my protein high today and focusing on getting enough water in (which I did not do yesterday). I really don't want to do another correction day right now. I seem to be collecting lots of recipes lately and I'm so behind in posting them that I'll be putting lots here over the next few weeks. I'll try to put some links to these on my Recipe page (poor page is so neglected!). I mostly gather them from blogs and, I'm sorry, I can't  always find who first created them. If I find more than 1 version then it is fair game for sharing!!! (This is called "common knowledge" in the copyright world) So today's share is a dessert! One blogger said "I fiddled with the recipe slightly - I mixed all the ingredients and put 3/4 of the batter into the pan and then added 1 rounded Tbl of Cocoa (~15 calories) and 2 Tbl of stevia to the remaining batter.  Then I marbled it into the brownie mix in the pan." (Thanks for the tip Sharon!)  

Almond Butter Pumpkin Brownies

1 egg - 70
1cup Almond Butter -1583
1/2 cup stevia
1/2 tsp baking soda
1/2 cup of pumpkin or squash - 105
Total - 1758
Beat egg, add almond butter and stevia till smooth. Add baking soda and pumpkin or squash. Grease pan with
coconut oil and bake at 350 for 25 to 30 min. Best to use crunchy almond butter.

I'll definitely use the cocoa too! This is dessert tonight! This is M1W2 and should be treated as a caution food because of the almond butter. Have a great day everyone!

When you add the cocoa to the Pumpkin Brownies how much and in place of or in addition to the other ingredients?

Also what size pan and how many servings should we get out of this recipe?

I just used an 8'' round cake pan. Servings...lol...if you divide it in 8 each piece would be about 222 calories a piece. This includes the heaping Tblsp of cocoa powder.
